Ingredients:
• Spinach tagliatelle (or your choice of pasta)
• 1 can of tuna (drained)
• 1 onion (finely chopped)
• 2 fresh tomatoes (diced)
• 1 avocado (diced)
• 4-5 oil-dried tomatoes (chopped)
• 2 tablespoons olive oil (or the oil from the dried tomatoes for extra flavor)
• Salt and pepper to taste
• Optional: fresh basil or parsley for garnish
Instructions:
1. Cook the Pasta:
• Boil a pot of salted water and cook the spinach tagliatelle according to the package instructions. Once done, drain and set aside.
2. Prepare the Sauce:
• While the pasta is cooking, heat olive oil in a large pan over medium heat.
• Add the chopped onion and sauté until it becomes soft and translucent.
• Stir in the diced fresh tomatoes and cook for about 5-7 minutes until they start to break down and release their juices.
• Add the chopped oil-dried tomatoes for an extra depth of flavor. Stir well.
3. Add Tuna:
• Flake the drained tuna into the pan with the tomato mixture. Stir to combine and heat through. Season with salt and pepper to taste.
4. Combine with Pasta:
• Add the cooked spinach tagliatelle to the pan and toss everything together until the pasta is well-coated with the sauce.
5. Serve:
• Serve the pasta in bowls, topped with diced avocado. The avocado adds a creamy texture and richness to the dish.
• Optionally, garnish with fresh basil or parmesan.
This dish is balanced with protein from the tuna, healthy fats from the avocado, and a good amount of fiber and vitamins from the spinach tagliatelle and fresh tomatoes.

2-3 tablespoons olive oil
2 garlic cloves, minced
Juice of 1 lemon
Salt and pepper to taste
Fresh parsley, chopped (optional)
Instructions:
Prepare the Artichokes:
Wash the artichokes thoroughly and trim the tips of the leaves (about 1-2 cm off the top).
Remove the tougher outer leaves and cut the stem at the base so the artichokes can stand upright.
Cut the artichokes in half lengthwise and, if needed, scoop out the fuzzy choke with a spoon.
Marinade:
In a bowl, mix the olive oil, lemon juice, minced garlic, salt, and pepper.
Place the artichoke halves in the mixture, ensuring they are well coated with the marinade.
Cooking in the Air Fryer:
Preheat the air fryer to 180°C (350°F) for about 5 minutes.
Place the artichokes in the air fryer basket with the cut side down.
Cook for 15-20 minutes, depending on the size of the artichokes, until they are golden and tender. Flip halfway through for even cooking.
Serving:
Remove the artichokes from the air fryer and sprinkle with chopped fresh parsley if desired.
Serve hot as an appetizer or side dish.
